Tuna tartare

- 800g tuna
- 1 c. tsp. strong Dijon mustard
- 2 shallots
- 2 c. tablespoons argan oil
- 1 dash red wine vinegar
- juice of one lemon
- a bunch of flat-leaf parsley
- 1 bunch tarragon
- Salt
- pepper
Preparation
Remove the skin from the tuna and chop finement with a knife, together with the shallots, flat-leaf parsley and tarragon.
Place in a salad bowl and mix with 1 tsp.
tsp.
of mustard, two tablespoons of argan oil, a dash of vinegar and the lemon juice.
Season with salt and pepper.
Leave to stand for a few moments to allow the tuna to cook naturally.
Serve with tomato salad or white rice…
