Rigatoni chia oil & arugula

- 400 g rigatoni
- 100 g fresh arugula
- 2 onions
- 100 g grated Parmesan cheese
- 50 g chia seeds
- 2 tablespoons chia oil
- 4 tablespoons grape seeds
- salt, pepper
Preparation
Wash and spin-dry the arugula.
Cook the rigatoni in a pot of boiling salted water (according to the time indicated on the packet), then drain the rigatoni in a colander and set aside.
Heat the grapeseed oil in a frying pan and sauté the chopped onions for 2 min.
Add the drained rigatoni and stir quickly.
Add the wrung-out arugula and toss gently for 1 min.
Remove the pan from the heat, add the chia seeds and grated Parmesan.
Add the chia seeds, salt and pepper to taste, and stir well.
All that’s left is to serve
