Potato & Pepper Salad

- 300/400 g potatoes
- 1 red onion
- 3 peppers (red, green and yellow)
- 50 g toasted pine nuts
- A dozen black olives -
- 6 tbsp rapeseed oil walnuts
- 2 tbsp balsamic vinegar
- Salt and pepper
Preparation
Cook the potatoes in a large volume of water and keep them slightly
firm (approx. 20 min.). Peel and dice potatoes. Core and dice the 3
peppers. Thinly slice the onion. Lightly toast the pine nuts
in a frying pan. Place all ingredients in a salad bowl. Pour in the Colza Walnut oil and
balsamic vinegar, and mix gently, seasoning with salt and pepper.
