Pork spider marinated in smoked olive oil and garlic

- 800G spider pork, cubed
- 2 tablespoons smoked olive oil
- 1 pinch pepper
- 2 garlic cloves
- 1 pinch Espelette pepper
- 1 good pinch of salt
Preparation
Place the pieces of spider pork in a dish. Drizzle with smoked olive oil. Add
grated garlic, salt, pepper and Espelette pepper. Leave to marinate for at least 1 hour,
stirring once or twice.
Heat a frying pan over high heat. Place the pork pieces and marinade in the
pan and cook for around 5/7 minutes. Don’t stir too much, as the meat needs to color.
