Peanut Sauce

- 100 g chopped peanuts
- 3 tbsp peanut oil
- 3 tablespoons sugar
- 60g peanut butter
- 1 tbsp ground coriander
- Salt
- 50 cl coconut milk
- 10 shallots
- 1 small pepper
- Lemongrass
Preparation
Finely chop shallots, half a chili pepper and lemongrass. Fry the shallots, chilli, lemongrass and ground coriander in a frying pan
. Add the
coconut milk, sugar and peanut butter, and season with salt. Simmer for 10/12 mins to thicken the sauce
