Pea Salad with Fresh Goat Cheese

Ingredients

  • 1 kg organic peas
  • 1 fresh goat's cheese
  • 1 large organic red onion
  • 1 bunch organic coriander
  • ½ bunch organic mint
  • 1 organic lemon juice
  • 1 tsp organic lemon zest
  • 2 tablespoons hemp oil
  • Salt
  • Pepper

Preparation

Cook the peas in boiling water for 9 minutes.
Drain and run under cold water. Place in a salad bowl. Peel and finely chop the red onion. Chop the coriander and mint. Add to
the salad bowl and mix.
Pour the lemon juice and zest into the bowl.
Crumble the fresh goat’s cheese, season lightly with salt and pepper and pour in 2 tablespoons of
hemp oil. Serve chilled.
