Moroccan-style sautéed zucchini salad

- 4 c. tablespoons Trio EQUILIBRE Organic oil
- 500g zucchini, washed and sliced
- 1 or 2 grated tomatoes, depending on size (in a blender)
- 1 clove garlic, crushed
- 1 c. cumin
- 1 c. sweet paprika
- salt and pepper
- 3-4 tbsp. coriander
- 3-4 tbsp. chopped parsley
- A dash of hot pepper (optional)
Preparation
Heat 4 tablespoons of Trio EQUILIBRE Biologique oil in a frying pan.
Add the zucchini slices.
Cook, stirring occasionally, toasting and browning slightly.
Add tomato coulis halfway through cooking, garlic and spices.
Continue stirring from time to time until finish and all the water has evaporated from the tomatoes.
Add the coriander and chopped parsley, stirring for a few moments before removing the zucchinis from the heat.
Enjoy your salad warm or cold
