Chicken Brochettes with Chorizo

- 4 chicken fillets
- 1 mild chorizo
- 2 red peppers
- 2 red onions
- 6 tablespoons PIZZA oil
- 6 tablespoons red vinegar
- 3 garlic cloves, minced
- 1 untreated lemon
- 2 teaspoons paprika
- 1 sprig fresh thyme
Preparation
Cut the chicken into large cubes, then cut thick slices of chorizo. Remove seeds from peppers and peel onions. Cut into squares. Peel and chop the
garlic cloves.
Pour all the ingredients into a salad bowl. Add the red vinegar, pizza oil,
lemon zest, spices and herbs. Mix well. Place in a cool place, covered with
cling film, for approx. 1 h.
Thread onto skewers, alternating pieces (peppers, chorizo, onions, chicken,
peppers…
To be cooked on the barbecue or plancha, turning well until
grilled.
